Straight from the producers

Every day, travelling from farm to farm, the cooperative’s milk collectors gather nearly 120,000 litres of milk.

Meticulously monitored and checked to meet safety and quality standards, it is then sent to our Soft Cheese Workshop. Working closely with our producers has always been one of our top priorities. The cooperative was established where its members are based. This is why we have a modern, efficient workshop in the heart of the countryside, just a stone’s throw from their farms. Fewer miles means better quality!

Production & Maturing

In our maturing rooms – temperature- and humidity-controlled spaces where the cheeses are placed after salting – the soft cheeses begin the maturing process. In a few weeks’ time, the Bries, Rochois, Merlemonts, Fondant Chauds, Camemberts Val de Saône, Carrérembons, Régal des Moines and Coulommiers Val de Saône will complete their fermentation process and reveal their unique flavour.
We produce 5,500 tonnes of soft cheeses every year.

All done and dusted!

All our soft cheeses are packaged on site using fully automated production lines. Once packaged, labelled and boxed, they are ready to be sent to cheese shops or supermarket shelves.
