Ingredients
1 Brie Pâturages Comtois, 800g potatoes, 25g butter, 1 large onion, 2 whole eggs, a few sprigs of parsley, salt and pepper, 50g breadcrumbs
Preparation
Steam the potatoes, then peel them whilst they are still firm.
Mash the flesh with a fork and add the Brie Pâturages Comtois, the whole eggs and the parsley.
Gently fry the finely chopped onion in a little butter until golden, then add it to the mixture.
Mix well, then season with salt and pepper.
Pour the mixture into a buttered tart tin, spreading it evenly over the whole surface.
Use the prongs of a fork to create a criss-cross pattern.
Sprinkle with breadcrumbs.
Bake for 10 minutes at 250°C.
Serve with a seasonal salad.
