Ingredients
- 1 Brie Pâturages Comtois
- 800g potatoes
- 25g butter
- 1 large onion
- 2 whole eggs
- a few sprigs of parsley, salt and pepper
- 50g breadcrumbs
Preparation
- Steam the potatoes, then peel them whilst they are still firm.
- Mash the flesh with a fork and add the Brie Pâturages Comtois, the whole eggs and the parsley.
- Gently fry the finely chopped onion in a little butter until golden, then add it to the mixture.
- Mix well, then season with salt and pepper.
- Pour the mixture into a buttered tart tin, spreading it evenly over the whole surface.
- Use the prongs of a fork to create a criss-cross pattern.
- Sprinkle with breadcrumbs.
- Bake for 10 minutes at 250°C.
- Serve with a seasonal salad.
